5 Minute Veggie Egg Pizza

This was a “what can I make with what’s in the fridge?” meal tonight … that turned into something amazing. Had to share … we will definitely be making this again soon. Even the kids liked it. At first sight, my youngest declared she didn’t “yike it”. But once she finally tried it, she not only ate her piece, but also crawled over to brother’s plate after dinner to see if he had any leftovers that she could grab for herself. So it was a hit.


It started by me looking into the fridge and pulling out:

*3 large ww wraps


*shredded mozzarella cheese

*sweet red pepper


*salt, pepper, garlic, Italian seasoning, and Parmesan cheese


I arranged the ww wraps to form a circle (this involved some ripping)

Placed a small layer of mozzarella on the bottom

Added four eggs (just cracked right on top, with yoke unbroken)

Added pepper slices

Added zucchini slices (i peeled long strips, but thin slices would work too)

Added an additional layer of mozzarella

Added sprinkles of salt, pepper, garlic, Italian seasoning, and Parmesan

before the oven, it looked like this:

Cooked @ 375 for about 15-20 minute.

Broil for about 1 minute, just to crisp things up.

The end result was great :) High in protein, low in carbs, and it just tasted … awesome. Just the right amount of crunch and sweet and savory. The eggs were a nice surprise that actually worked … and the whole meal for sure was less than $5, with under 5 minute of prep. Woohoo for another fun meal.


Could def make this as a sandwich too … and just roll it up into a wrap. Maybe will try that another time.
