Spinach Eggs that your kids will LOVE

hey all.

I am not a food blogger. I don’t want to be a food blogger. I’m not trying to be a food blogger.

But sometimes something is so fun that you just have to share. Especially if you are a health-conscious mom with a house full of picky eaters. For me, this was revolutionary.

Spinach Eggs everyone.

Not like chopped spinach in your eggs. Not like chopped spinach in your quiche. But spinach, blended so completely into your eggs that you can’t even taste it – can’t feel it in your teeth – just added nutrution, without the spinich grit.

Now, personally, I like chopped spinach cooked in my eggs, on top of my eggs, on the side of my eggs, or any where else – but my kiddos – mmmm….not so much. If they see the little chunks of green, all of a sudden it is “gross” and “i don’t like this” and “this makes my mouth feel funny”.

Until in a moment of creativity, I threw my eggs in the blender. I added spinach. Salt and pepper.

Would it work?  It blended perfectly – no grit

(if you like salt or pepper in your eggs, or a splash of milk – add that now)

But would it cook well? Would the consistency be the same?

Well … it cooked just like scrambled eggs. It took perhaps just a little bit longer – but it cooked the same.

(also – just like with regular eggs, be careful not to overcook. my grandmother always made the best scrambled eggs, and she removed them from the heat when they were still a little bit shiny. No worries about salmonella, they keep cooking for a few minutes after they’re off the heat)

What do you like in your scrambled eggs? We do salt and pepper, with a little bit of cheese … so I added some cheese on top (and a little in the eggs, too)
So – my kids love these. I love them.
I’m excited they’re getting so much spinach
They’re excited because they’re green.
It’s a win with everyone.
We’ve eaten these in the morning with toast.
We’ve eaten these at night, in a burrito, with tomatoes/salsa, cheese, and avacados on top.
Easy.
Fast.
You can eat them for Breakfast, Lunch or Dinner.
They’re Fun.
They’re Healthy.
They’re Green (Great for St. Patricks Day, Green Eggs & Ham Celebrations, or any other time you need something special and green)
